Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 425°F (220°C). Grease four ramekins with butter and lightly dust with flour. Set aside.

  2. 2

    Melt the Chocolate

In a microwave-safe bowl, combine the chopped dark chocolate and butter. Heat in the microwave in 30-second intervals, stirring between each interval, until melted and smooth. Allow to cool slightly.

  3. 3

    Mix Dry Ingredients

In another bowl, whisk together the flour, cocoa powder, sugar, salt, and baking powder until well combined.

  4. 4

    Combine Wet Ingredients

In a separate bowl, beat the eggs and vanilla extract together until light and frothy.

  5. 5

    Combine Mixtures

Gradually add the melted chocolate mixture to the egg mixture, stirring constantly. Then fold in the dry ingredients until just combined.

Baking

  1. 6

    Fill Ramekins

Divide the batter equally among the prepared ramekins, filling each about 3/4 full.

  2. 7

    Bake

Bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is still soft.

  3. 8

    Cool Slightly

Remove the ramekins from the oven and let them cool for 1-2 minutes before serving.

Serving

  1. 9

    Plate and Serve

Carefully run a knife around the edges of the ramekins and invert each cake onto a plate. Dust with powdered sugar, and serve warm with a scoop of vanilla ice cream and fresh berries if desired.
