Calamari Preparation

Clean the Calamari
Rinse the fresh calamari under cold water, then remove the head and innards. Slice the body into rings, about 1/2 inch thick.

Prepare the Breading Station
In a shallow dish, mix together all-purpose flour, cornstarch, salt, black pepper, garlic powder, and paprika. In another dish, whisk together eggs and buttermilk.

Bread the Calamari
Dip the calamari rings into the egg mixture, allowing excess to drip off, then dredge them in the flour mixture until well-coated.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Calamari
Fry the breaded calamari in batches for about 2-3 minutes or until golden brown and crispy. Remove with a slotted spoon and place on a paper towel to drain excess oil.
Marinara Sauce Preparation

Sauté Garlic
In a saucepan, heat olive oil over medium heat. Add minced garlic cloves and sauté until fragrant, about 1 minute.

Add Tomatoes and Seasonings
Stir in the canned crushed tomatoes, dried oregano, dried basil, salt, black pepper, and sugar. Bring to a simmer.

Simmer the Sauce
Lower the heat and let the sauce simmer for about 15-20 minutes, stirring occasionally until thickened.
