Winemaking Process

Harvesting
Harvest the Sauvignon Blanc grapes when they reach optimal ripeness, usually in late summer to early autumn.

Crushing and Pressing
Crush the harvested grapes and press them to extract the juice.

Fermentation
Transfer the grape juice to a fermentation vessel, add yeast, and allow it to ferment at controlled temperatures for about 2-3 weeks.

Clarification
After fermentation, clarify the wine by allowing solids to settle at the bottom of the tank.

Aging
Age the wine in stainless steel tanks for 3-6 months to develop flavors.

Bottling
Once aging is complete, filter the wine and bottle it for storage or immediate sale.
