Prepare the Ingredients

Start by cutting the beef short ribs into manageable pieces. Chop the onions and tomatoes finely.

Sauté the Aromatics

In a large pot, heat the coconut oil over medium heat. Add the chopped onions and sauté until they turn translucent.

Add Ginger-Garlic Paste

Stir in the ginger-garlic paste and cook for an additional 2 minutes until fragrant.

Incorporate the Spices

Add the Kashmiri red chili powder, turmeric powder, coriander powder, garam masala, cardamom pods, cloves, and cinnamon stick. Mix well and sauté for a minute.

Add Tomatoes and Beef

Add the chopped tomatoes to the pot and cook until they soften. Then, add the beef short ribs and mix well, ensuring the meat is coated in the masala.

Add Water and Simmer

Pour in the water and add salt. Bring to a boil, then reduce the heat to low. Cover and let it simmer for about 2 to 2.5 hours or until the beef is tender.

Garnish and Serve

Once the beef is tender, remove it from heat, garnish with fresh coriander leaves, and serve hot with Kerala parotta or Kerala rice.
