Method

Dough Preparation

1

Mixing the Dough

In a large mixing bowl, combine all-purpose flour and salt. Gradually add water and oil, kneading until you form a smooth and elastic dough. Cover the dough with a damp cloth and let it rest for at least 30 minutes.

Filling Preparation

2

Preparing the Filling

In a pan, heat a little oil and sauté the chopped onions until golden brown. Add chopped green chilies, turmeric powder, and garam masala. Cook for a minute before adding the mashed potatoes and chopped coriander leaves. Season with salt to taste and mix well. Set aside to cool.

Assembly and Cooking

3

Stuffing the Vaatte

Divide the dough into equal-sized balls. Roll out each ball into a thin circle. Place a spoonful of the potato filling in the center and fold the edges to seal the filling inside. Gently roll it out again into a thin disc.

4

Cooking the Vaatte

Heat a skillet or tawa over medium heat. Add a little oil or ghee. Cook each vaatte on both sides until golden brown and crispy. Repeat with the remaining dough and filling.
