Chicken Marinade and Coating

Method

Preparation and Cooking

1

Marinate the Chicken

In a large bowl, combine the yogurt, ginger-garlic paste, turmeric powder, red chili powder, garam masala, lemon juice, and salt. Add the chicken pieces and coat them well. Cover and refrigerate for at least 2 hours, preferably overnight.

2

Prepare the Coating

In a separate bowl, mix the rice flour, all-purpose flour, baking powder, black pepper powder, and a pinch of salt. Add enough water to form a thick batter.

3

Heat the Oil

In a large, deep frying pan, heat the oil over medium heat until hot (about 350°F or 175°C).

4

Coat and Fry the Chicken

Remove the marinated chicken from the refrigerator. Dip each piece into the batter, allowing excess to drip off. Carefully place the chicken in the hot oil, frying in batches to avoid overcrowding. Fry until golden brown and cooked through, about 12-15 minutes per batch.

5

Drain and Serve

Once cooked, remove the chicken from the oil and drain on paper towels. Serve hot with your favorite dipping sauce or as part of a meal.
