Make the Dough
In a large bowl, mix the all-purpose flour, ghee (or oil), and salt. Gradually add water to form a firm dough. Knead for about 5-7 minutes until smooth. Cover with a damp cloth and let it rest for 30 minutes.

Prepare the Filling
In a pan, heat a little oil and sauté the onions until translucent. Add the ginger, green chili, and carrots. Cook for a few minutes. Then, add the mashed potatoes, green peas, coriander powder, cumin powder, garam masala, and salt. Mix well and cook for another 5 minutes. Stir in the fresh coriander leaves and let the mixture cool.

Assemble the Samosas
Divide the dough into small balls. Roll each ball into a thin oval shape. Cut it in half to form two semi-circles. Take one semi-circle, form a cone, sealing the edge with a little water. Fill the cone with the vegetable filling and seal the top edge.

Fry the Samosas
Heat oil in a deep frying pan over medium heat. Fry the samosas in batches until golden brown and crispy, about 5-7 minutes. Drain on paper towels.
