Preparation of Chicken Lollipops

Marinate the Chicken
In a large bowl, combine the chicken drumsticks with ginger-garlic paste, red chili powder, turmeric powder, coriander powder, garam masala, lemon juice, and salt. Mix well and let it marinate for at least 1 hour, preferably overnight in the refrigerator.

Prepare the Breading
In another bowl, whisk together all-purpose flour, cornstarch, and a pinch of salt. In a separate bowl, beat the egg.

Coat the Chicken
Take each marinated chicken drumstick, dip it in the egg wash, then coat it with the flour-cornstarch mixture. Ensure it’s well-coated.
Frying the Chicken

Heat the Oil
In a deep frying pan, heat enough oil for deep frying over medium heat.

Fry the Chicken Lollipops
Once the oil is hot, carefully place the coated chicken drumsticks in the oil. Fry until golden brown and crispy, about 10-12 minutes. Remove and drain on paper towels.

Prepare the Aioli
In a small bowl, combine mayonnaise, minced garlic, curry leaves, lemon juice, and salt. Mix well until smooth.
