Method

Making the Dough

  1. 1

    Step 1: Prepare the Dough

In a large mixing bowl, combine the all-purpose flour and salt. Gradually add water and knead the mixture into a soft and smooth dough. Add 2 tablespoons of oil and knead again for a few minutes until well incorporated.

  2. 2

    Step 2: Rest the Dough

Cover the dough with a damp cloth or plastic wrap and let it rest for at least 1 hour at room temperature.

Making the Parotta

  1. 3

    Step 3: Divide the Dough

After resting, divide the dough into equal-sized balls (about 10-12 balls).

  2. 4

    Step 4: Roll the Dough

Take a dough ball and flatten it slightly. Use a rolling pin to roll it out into a thin circle. Brush the surface lightly with oil or ghee.

  3. 5

    Step 5: Create Layers

Fold the rolled dough into a pleated shape, then coil it into a round shape (like a swirl). Flatten it gently with your palm and roll it out again to form a parotta.

  4. 6

    Step 6: Cook the Parotta

Heat a tawa or frying pan over medium heat. Place the rolled parotta on the hot tawa and cook until golden brown on both sides, brushing with oil or ghee as needed.

  5. 7

    Step 7: Serve

Serve the Kerala Parotta hot with curry or any side dish of your choice.
