Preparation of Croquettes

    Cook Yucca

    In a large pot, bring salted water to a boil and add the cubed yucca. Cook until tender, about 15-20 minutes. Drain and mash until smooth.

    Sauté Vegetables

    In a skillet, heat a tablespoon of oil over medium heat. Add the chopped onion and garlic, and sauté until translucent. Add the mushrooms and peas, cooking until mushrooms are soft. Stir in the coriander, cumin, turmeric, salt, and pepper, and cook for another 2 minutes.

    Combine Ingredients

    In a large bowl, combine the mashed yucca with the sautéed vegetable mixture. Mix thoroughly and let it cool slightly.

    Shape Croquettes

    Once cool enough to handle, form the mixture into small balls or patties. Roll each croquette in flour, ensuring they are evenly coated.

Frying Croquettes

    Heat Oil

    In a large frying pan, heat vegetable oil over medium-high heat until hot.

    Fry Croquettes

    Carefully add the croquettes to the hot oil, frying in batches until golden brown on all sides. This should take about 3-4 minutes per side.

    Drain and Serve

    Once cooked, remove croquettes from oil and drain on paper towels. Serve hot with chili lime sauce.

    Mix Sauce

    In a small bowl, combine mayonnaise, lime juice, chili powder, garlic powder, and salt. Mix until smooth and well combined. Adjust seasoning to taste.
