Pickling Brine
Method
Preparation
- 1
Prepare the Vegetables
Wash and cut the cucumbers, carrots, radishes, and cauliflower into bite-sized pieces. Trim the ends of the green beans. Peel the garlic cloves.
- 2
Make the Brine
In a saucepan, combine water, white vinegar, sugar, salt, mustard seeds, black peppercorns, red pepper flakes, and dill seeds. Bring to a boil while stirring until the sugar and salt dissolve.
Canning
- 3
Pack the Jars
Sterilize mason jars and lids. Pack the prepared vegetables and garlic cloves tightly into the jars.
- 4
Add the Brine
Pour the hot brine over the packed vegetables, leaving about 1/2 inch of headspace at the top of each jar. Seal the jars with the lids.
- 5
Process the Jars
Process the jars in a boiling water bath for 10-15 minutes to ensure a proper seal. Remove from the water bath and let them cool completely.
