Method

Distillation Process

    Mashing

    In a large mash tun, combine the barley malt and peated malt with hot water. Allow the mixture to rest for about 60 minutes to convert the starches into sugars.

    Lautering

    After mashing, transfer the mixture to a lauter tun to separate the liquid wort from the solid grains. Rinse the grains with additional water to extract as much sugar as possible.

    Fermentation

    Cool the wort to around 20-25°C (68-77°F) and transfer it to a fermentation vessel. Add the yeast and allow it to ferment for approximately 5-7 days until fermentation is complete.

    Distillation

    Transfer the fermented liquid to a pot still and distill it. Collect the distillate, which will become the base for the single malt whisky.

    Aging

    Transfer the distilled spirit into oak barrels for aging. Allow it to mature for at least 3 years to develop complex flavors.

    Bottling

    After aging, the whisky can be filtered and diluted to the desired bottling strength before being bottled.
