Soak the kokum in warm water for about 15 minutes until it softens, then drain and set aside.

In a large pan, heat the cooking oil over medium heat. Add the fenugreek seeds and sauté until they become aromatic.

Adding Tomatoes and Spices
Stir in the chopped tomatoes, turmeric powder, red chili powder, and salt. Cook until the tomatoes soften.

Incorporating Coconut Milk
Pour in the coconut milk and bring the mixture to a gentle simmer. Add the soaked kokum and let it cook for about 5 minutes.

Cooking the Salmon
Gently place the salmon fillets into the curry sauce and cook for 8-10 minutes until the salmon is cooked through.

Garnish with chopped cilantro before serving. Adjust salt to taste.
