    Prepare the Sauce

    In a large skillet, heat the olive oil over medium heat. Add the diced onion, carrot, and celery, and sauté until soft, about 5-7 minutes.

    Cook the Lamb

    Add the ground lamb to the skillet and cook until browned, about 8-10 minutes. Use a wooden spoon to break up the meat as it cooks.

    Add Aromatics

    Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

    Deglaze with Wine

    Pour in the red wine, scraping the bottom of the skillet to release any browned bits. Allow the wine to simmer for about 5 minutes.

    Add Tomatoes and Seasonings

    Add the canned crushed tomatoes, dried oregano, salt, and black pepper. Stir to combine and let simmer for 30-40 minutes, stirring occasionally.

    Cook the Pappardelle

    While the sauce simmers, cook the pappardelle pasta according to package instructions. Drain and set aside.

    Combine and Serve

    Toss the cooked pappardelle with the lamb Bolognese sauce. Serve hot, garnished with grated Parmesan cheese and fresh basil.
