    Prepare the Vegetables

    Peel and chop the potatoes and onion into small pieces. Rinse the wild garlic leaves under cold water and roughly chop them.

    Sauté the Onions

    In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

    Add Potatoes and Stock

    Add the chopped potatoes to the pot and stir for a couple of minutes. Pour in the vegetable stock and bring to a boil.

    Cook the Soup

    Reduce the heat and let it simmer for about 15-20 minutes, until the potatoes are tender.

    Add Wild Garlic

    Once the potatoes are tender, add the chopped wild garlic leaves to the pot and simmer for an additional 5 minutes.

    Blend the Soup

    Remove the pot from heat and use an immersion blender to puree the soup until smooth. Alternatively, transfer to a blender in batches.

    Season and Serve

    Return the soup to low heat, season with salt and black pepper to taste. Serve hot in bowls, topped with a dollop of crème fraîche.
