Whipped Cod's Roe Preparation

Whip the Cod's Roe
In a bowl, combine the cod's roe, cream cheese, lemon juice, olive oil, salt, and black pepper. Use a hand mixer or whisk to whip until smooth and creamy. Fold in chopped fresh chives. Set aside.
Grilled Flatbread Preparation

Make the Flatbread Dough
In a mixing bowl, combine flour, salt, and baking powder. Make a well in the center and add water and olive oil. Mix until a dough forms. Knead on a floured surface for about 5 minutes until smooth. Divide into equal pieces and roll out into flatbreads.

Prepare the Cracker Dough
In a bowl, mix flour, salt, and black pepper. Cut in the butter until the mixture resembles coarse crumbs. Stir in buttermilk until a dough forms. Roll out thinly on a floured surface.

Bake the Crackers
Preheat the oven to 180°C (350°F). Cut the rolled dough into cracker shapes and place on a baking sheet. Bake for 15-20 minutes until golden and crisp. Allow to cool.
