Cooking Instructions

  1. 1

    Prepare the Filling

In a large mixing bowl, combine ground pork, ground beef, pork fatback, chopped onion, minced garlic, chopped thyme, and bay leaf. Mix until well combined.

  2. 2

    Season the Mixture

Add in eggs, salt, and black pepper. Mix thoroughly until everything is evenly distributed.

  3. 3

    Preheat Oven

Preheat your oven to 180°C (350°F).

  4. 4

    Prepare the Pastry

Roll out the puff pastry on a lightly floured surface to fit your terrine mold. Ensure there is enough overhang to cover the top.

  5. 5

    Assemble the Terrine

Line the terrine mold with the puff pastry, leaving some overhanging. Fill the mold with the meat mixture, pressing down to eliminate air pockets. Fold the pastry over the top and seal.

  6. 6

    Bake the Terrine

Place the terrine in the preheated oven and bake for about 1 hour, or until the internal temperature reaches 70°C (160°F).

  7. 7

    Cool and Serve

Remove from the oven and allow it to cool slightly before refrigerating for several hours or overnight. Serve chilled with house relish.
