In a large mixing bowl, combine ground pork, ground beef, pork fatback, chopped onion, minced garlic, chopped thyme, and bay leaf. Mix until well combined.

Add in eggs, salt, and black pepper. Mix thoroughly until everything is evenly distributed.

Preheat your oven to 180°C (350°F).

Prepare the Pastry
Roll out the puff pastry on a lightly floured surface to fit your terrine mold. Ensure there is enough overhang to cover the top.

Line the terrine mold with the puff pastry, leaving some overhanging. Fill the mold with the meat mixture, pressing down to eliminate air pockets. Fold the pastry over the top and seal.
