Preparation and Cooking

    Slow Cook the Beef

    In a large pot, heat olive oil over medium heat. Add chopped onion, carrot, celery, and garlic, sautéing until softened.

    Add Beef and Liquids

    Add the Herefordshire beef and brown on all sides. Pour in the red wine and scrape any browned bits from the bottom of the pot. Add the beef stock and bring to a simmer.

    Cook the Beef

    Cover the pot and let the beef cook on low heat for about 3 hours, or until tender.

    Prepare the Bouillon

    Once the beef is cooked, remove it from the pot and let it rest. Strain the cooking liquid to remove vegetables and set aside.

    Cook the Tortellini

    In a separate pot, bring water to a boil and cook the tortellini according to package instructions. Drain and set aside.

    Sauté Wild Mushrooms

    In a skillet, add a little olive oil and sauté the wild mushrooms until tender. Season with salt and pepper.

    Combine and Serve

    Shred the beef and return it to the bouillon. Add bone marrow and sautéed mushrooms. Serve the beef mixture over tortellini, garnished with fresh parsley.
