    Prepare the Quinoa

    Rinse the quinoa under cold water. In a medium saucepan, combine the quinoa with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until water is absorbed and quinoa is fluffy. Remove from heat and let it sit covered for 5 minutes.

    Sauté the Vegetables

    In a large skillet, heat olive oil over medium heat. Add chopped onion and sauté until translucent, about 5 minutes. Add minced garlic and cook for an additional minute.

    Combine Filling Ingredients

    Add cooked quinoa, black beans, corn, cumin, chili powder, salt, and pepper to the skillet. Stir well to combine and heat through for about 5 minutes.

    Prepare the Bell Peppers

    Preheat your oven to 375°F (190°C). Slice the tops off the bell peppers and remove seeds. Place them upright in a baking dish.

    Stuff the Peppers

    Spoon the quinoa and bean mixture into each bell pepper until they are filled to the top. If using, sprinkle cheddar cheese on top of each stuffed pepper.

    Bake

    Cover the baking dish with foil and bake for 25 minutes. Remove the foil and bake for an additional 10 minutes, or until the peppers are tender and the cheese is bubbly.

    Serve

    Remove from the oven and let cool for a few minutes before serving. Enjoy your stuffed bell peppers!
