Preparation
1. Pickle the Onions
In a bowl, combine the white vinegar, water, sugar, and salt. Stir until dissolved. Add the sliced red onions and let them marinate for at least 30 minutes.
2. Prepare the Shimeji Mushrooms
In a skillet, heat olive oil over medium heat. Add shimeji mushrooms and salt. Sauté until golden brown and tender, about 5 minutes. Set aside.
3. Make the Chive Crumb
In a bowl, mix panko breadcrumbs with melted butter and chopped chives. Spread the mixture on a baking sheet and toast in a preheated oven at 180°C (350°F) for about 10 minutes or until golden.
4. Prepare the Steak Tartare
In a bowl, mix the finely chopped beef tenderloin, egg yolk, Dijon mustard, Worcestershire sauce, salt, and black pepper until well combined.
5. Make the Smoked Dressing
In a small bowl, whisk together smoked paprika, olive oil, lemon juice, and salt until well combined.
Assembly
6. Plate the Tartare
On a serving plate, form the steak tartare into a small mound. Top with pickled onions, sautéed shimeji mushrooms, and sprinkle with chive crumb. Drizzle with smoked dressing before serving.
