Preparation of Steak Tartare

    Prepare the Beef

    Finely chop the beef tenderloin using a sharp knife. Place it in a mixing bowl.

    Add Pickled Onion and Seasoning

    Chop the pickled onions and add them to the beef. Season with salt and black pepper.

    Mix in Dressing

    In a separate small bowl, whisk together the smoked olive oil, Worcestershire sauce, and Dijon mustard. Pour the dressing over the beef mixture and mix gently until combined.

    Add Egg Yolks

    Create a small well in the center of the beef mixture and place the egg yolks on top.

Cooking Shimeji Mushrooms

    Sauté Shimeji Mushrooms

    In a pan over medium heat, sauté the shimeji mushrooms in a little olive oil until they are tender and slightly golden. Season with salt and pepper to taste.

Serving

    Plate the Dish

    On a plate, form the steak tartare into a round shape. Top with sautéed shimeji mushrooms and sprinkle chopped chives over the top. Serve immediately.
