    Prepare the Short Ribs

    Preheat your oven to 300°F (150°C). Season the Herefordshire beef short ribs with salt and black pepper. In a large oven-safe pot, heat 1 tablespoon of olive oil over medium-high heat. Sear the short ribs on all sides until browned, about 3-4 minutes per side.

    Bake the Short Ribs

    Add enough water to the pot to cover the ribs halfway. Cover the pot with a lid and place it in the preheated oven. Bake for 3 hours or until the ribs are tender.

    Cook the Jersey Royal Potatoes

    While the ribs are cooking, place the Jersey Royal potatoes in a pot of salted water and bring to a boil. Cook for about 15-20 minutes until fork-tender. Drain and set aside.

    Grill the Asparagus and Tomatoes

    Heat a grill or grill pan over medium-high heat. Toss the asparagus and tomatoes with the remaining olive oil, salt, and pepper. Grill the asparagus for about 5-7 minutes until tender and grill the tomatoes until they are slightly charred.

    Assemble the Salad

    In a large bowl, combine the cooked Jersey Royal potatoes, grilled asparagus, and grilled tomatoes. Drizzle with balsamic vinegar and toss gently. Add chopped fresh parsley for garnish.
