Prepare the Dough

Make the Dough
In a large bowl, mix the flour and salt. Make a well in the center and add eggs and olive oil. Gradually combine the ingredients until a dough forms.

Knead the Dough
Turn the dough onto a floured surface and knead for about 10 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

In a bowl, mix together the ricotta, lemon zest, lemon juice, Parmesan, salt, and pepper until well combined.
Assemble the Tortellini

Roll Out the Dough
Divide the dough into quarters. Roll out one piece at a time to about 1/16 inch thickness. Cut into 3-inch squares.

Fill and Shape Tortellini
Place a small spoonful of filling in the center of each square. Fold over to form a triangle, sealing the edges. Bring the two corners together to form a ring and pinch to seal.

Boil the Tortellini
Bring a pot of salted water to a boil. Add tortellini and cook for about 4-5 minutes until they float. Remove with a slotted spoon.
