Gnocchi

Method

Preparation

  1. 1

    Make the Gnocchi

Boil the potatoes until tender, about 20-25 minutes. Drain and let cool slightly. Peel the potatoes and mash them until smooth.

  2. 2

    Mix the Dough

In a large bowl, combine the mashed potatoes, flour, egg, and salt. Mix until a dough forms. If the dough is too sticky, add a little more flour.

  3. 3

    Shape the Gnocchi

Divide the dough into small portions and roll each into a long rope. Cut into 1-inch pieces. Optional: Use a fork to create ridges on each piece.

  4. 4

    Cook the Gnocchi

Bring a large pot of salted water to a boil. Add the gnocchi to the boiling water. Once they float to the surface, cook for an additional 1-2 minutes. Remove with a slotted spoon.

  5. 5

    Prepare the Peas and Hazelnuts

In a skillet, heat the olive oil over medium heat. Add the English peas and sauté for 3-4 minutes until tender. Stir in the toasted hazelnuts and ground black lime.

  6. 6

    Combine and Serve

Add the cooked gnocchi to the skillet and toss gently to combine. Serve hot, garnished with fresh parsley.
