Prepare the Pork Belly
Score the skin of the pork belly in a diamond pattern, being careful not to cut into the meat. Rub the salt and black pepper all over the pork belly, ensuring it gets into the scores.

Add Aromatics
Place the pork belly in a slow cooker or a deep roasting pan. Add crushed garlic cloves and fresh thyme sprigs around the meat.

Mix Liquid Ingredients
In a bowl, combine apple cider vinegar and water. Pour this mixture over the pork belly.

Cook the Pork Belly
Cover the slow cooker or roasting pan tightly and cook on low heat for 6-8 hours, or until the pork is tender and the fat has rendered.

Prepare the Apple Puree
While the pork is cooking, peel and chop 4 apples. Cook them in a pot with a little water until soft. Blend until smooth. Season with a pinch of salt and set aside.

Serve
Once the pork belly is cooked, remove it from the cooker and let it rest for 10 minutes. Slice and serve with apple puree.
