Method

Preparation of Salt Cod Croquette

    Soak the Salt Cod

    Soak the salt cod in water for 24 hours, changing the water a few times to remove excess salt.

    Prepare the Potato

    Boil the diced potatoes until tender. Drain and mash.

    Combine Ingredients

    Flake the soaked salt cod and mix it with the mashed potatoes, beaten egg, parsley, olive oil, salt, and pepper.

    Form Croquettes

    Shape the mixture into small balls or patties and coat them in breadcrumbs.

    Fry Croquettes

    Heat oil in a frying pan and fry the croquettes until golden brown on all sides. Drain on paper towels.

Slow Baked Fennel

    Preheat the oven to 180°C (350°F). Trim and slice the fennel bulbs.
