    Peel and core the apples, then chop them into small pieces. Finely dice the red onion. In a saucepan, combine the apples, onion, cider vinegar, sugar, and cinnamon. Cook over medium heat until the apples are soft and the mixture is slightly thickened, about 15 minutes. Set aside to cool.

    Season the Tamworth pork chops with salt and pepper. Rub nduja evenly over the surface of the chops.
