    Prepare the Pork Chops

    Season the Tamworth pork chops with salt and black pepper on both sides. Allow them to sit at room temperature for about 30 minutes before grilling.

    Make the Sage Butter

    In a small saucepan over medium heat, melt the butter. Add the minced garlic and fresh sage leaves. Cook for about 2-3 minutes until fragrant. Remove from heat and set aside.

    Grill the Pork Chops

    Heat a grill or grill pan over medium-high heat. Brush the grill with olive oil to prevent sticking. Grill the pork chops for about 4-5 minutes on each side or until they reach an internal temperature of 145°F (63°C).

    While the pork chops are grilling, heat a splash of olive oil in a separate pan over medium heat. Add the spring greens and sauté for about 3-4 minutes until wilted. Season with salt and pepper to taste.
