    Prepare the Ingredients

    Start by cleaning the scallops, removing the side muscle if necessary. Rinse the lettuce and peas (if using fresh), and chop the bacon into small pieces.

    Cook the Bacon

    In a pan, add the smoked bacon and cook over medium heat until crispy. Once done, remove and drain on paper towels.

    Sauté the Peas

    In the same pan, add 20g of butter and toss in the peas. Sauté for about 3-4 minutes until tender. Season with salt, pepper, and lemon juice, then set aside.

    Grill the Scallops

    Heat the remaining butter and a drizzle of olive oil in a grill pan over high heat. Season the scallops with salt and pepper, then grill for about 2-3 minutes on each side until they are golden and cooked through.

    Assemble the Dish

    On each plate, lay down a bed of lettuce, spoon over the sautéed peas, and place the grilled scallops on top. Sprinkle with crispy bacon and finely chopped chives.
