    Prepare the Ingredients

    Clean the scallops under cold water and pat dry. Chop the smoked bacon into small pieces and finely dice the shallots.

    Cook the Bacon

    In a skillet, heat the olive oil over medium heat. Add the chopped bacon and cook until crispy, about 5-7 minutes. Remove the bacon and set aside, leaving the fat in the skillet.

    Sauté the Shallots

    In the same skillet with the bacon fat, add the diced shallots and sauté until translucent, about 3 minutes.

    Add the Peas

    Add the green peas to the skillet and pour in the white wine. Cook for about 5 minutes until the peas are tender. Season with salt and black pepper.

    Grill the Scallops

    Preheat a grill or grill pan over high heat. Brush the scallops with melted butter and season with salt and pepper. Grill the scallops for about 2-3 minutes on each side until they are golden brown and cooked through.

    Assemble the Dish

    On a plate, arrange the sautéed peas and shallots, top with the grilled scallops, and garnish with crispy bacon and fresh baby lettuce leaves.
