Focaccia

Method

Preparation

  1. 1

    Activate the Yeast

In a small bowl, combine warm water and yeast. Let it sit for about 5-10 minutes until frothy.

  2. 2

    Make the Dough

In a large mixing bowl, combine flour and salt. Add the activated yeast mixture and olive oil. Mix until a dough forms.

  3. 3

    Knead the Dough

Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth.

  4. 4

    First Rise

Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

  5. 5

    Shape the Focaccia

After rising, punch down the dough and transfer it to a greased baking sheet. Stretch and flatten it to fit the sheet.

  6. 6

    Add Toppings

Dimple the surface of the dough with your fingers. Drizzle with olive oil, sprinkle with rosemary and coarse sea salt.

  7. 7

    Second Rise

Cover and let it rise again for about 20-30 minutes.

  8. 8

    Bake

Preheat the oven to 425°F (220°C). Bake the focaccia for 20-25 minutes until golden brown.

  9. 9

    Cool and Serve

Allow to cool slightly before cutting into squares. Serve warm with additional olive oil for dipping.
