Soufflé Directions

    Preheat the oven

    Preheat your oven to 190°C (375°F). Grease the ramekins with butter and dust with sugar.

    Melt chocolate

    In a heatproof bowl, melt the dark chocolate and butter together over a pot of simmering water, stirring until smooth.

    Prepare egg mixture

    In a separate bowl, whisk the egg yolks and granulated sugar until pale and creamy. Stir in the melted chocolate mixture and add vanilla extract.

    Whip egg whites

    In a clean bowl, beat the egg whites with a pinch of salt until stiff peaks form.

    Combine mixtures

    Gently fold the whipped egg whites into the chocolate mixture until just combined.

    Bake

    Pour the soufflé batter into prepared ramekins and bake for 12-15 minutes until puffed and set.

    Prepare cream mixture

    In a saucepan, combine Jersey milk, heavy cream, and half of the sugar. Heat until just boiling.

    Whisk egg yolks

    In a separate bowl, whisk the egg yolks with the remaining sugar until pale.

    Temper yolks

    Slowly add the hot milk mixture to the egg yolks while whisking constantly to prevent curdling.

    Thicken mixture

    Return the mixture to the saucepan and cook over low heat, stirring constantly until it thickens enough to coat the back of a spoon.

    Chill and churn

    Remove from heat, stir in the vanilla extract, and chill the mixture in the fridge. Once chilled, churn in an ice cream maker according to the manufacturer's instructions.
