    Prepare the Butter Poaching Liquid

    In a saucepan, melt the unsalted butter over low heat until it’s fully melted but not boiling.

    Poach the Cod

    Add the Icelandic cod fillets to the melted butter and poach gently for about 10-12 minutes, or until the fish is cooked through and flakes easily with a fork. Remove the fish and set aside.

    Sauté the Vegetables

    In a separate skillet, add a little of the butter from the poaching pan and sauté the garlic for 1 minute. Then add the zucchini, yellow squash, and cherry tomatoes. Cook for about 5-7 minutes until they are tender.

    Combine the Lobster and Vegetables

    Add the chopped lobster meat to the sautéed vegetables, season with salt, black pepper, and fresh marjoram. Stir to combine and heat through for about 3 minutes.

    Serve

    Plate the poached cod and top with the lobster and summer vegetable mixture. Garnish with additional marjoram if desired.
