    Prepare the Pea Velouté

    In a saucepan, bring the vegetable stock to a simmer. Add the fresh English peas and cook for about 3-5 minutes until tender. Remove from heat and let cool slightly.

    Blend the Peas

    Transfer the peas and stock to a blender. Add a tablespoon of olive oil, salt, and lemon juice. Blend until smooth and creamy. If the mixture is too thick, add a little more stock to reach desired consistency.

    Chill the Velouté

    Strain the pea mixture through a fine sieve into a bowl to remove any solids. Cover and refrigerate for at least 30 minutes until chilled.

    Prepare the Garnish

    In a small bowl, combine the mixed spring leaves and chopped fresh herbs. Drizzle with the remaining olive oil, and season with salt and black pepper to taste.

    Assemble the Dish

    To serve, ladle the chilled pea velouté into bowls. Tear the burrata cheese and place it in the center of the soup. Top with the spring leaves and herb mixture. Drizzle with extra olive oil if desired.
