Method
Preparing the Salad Base
- 1
Wash and Chop Greens
Rinse the mixed salad greens under cold water, then spin dry in a salad spinner or pat dry with paper towels. Place in a large salad bowl.
- 2
Slice the Cucumbers
Peel the cucumber if desired, then cut it into thin slices. Add to the salad bowl with the greens.
- 3
Prepare the Avocado
Cut the avocado in half, remove the pit, and scoop the flesh out with a spoon. Slice the avocado and add it to the salad bowl.
Preparing Citrus Fruits
- 4
Peel and Segment Oranges
Cut off the top and bottom of each orange to create a flat base. Stand them upright and slice down the sides to remove the peel. Segment the oranges by cutting between the membranes and add to the salad bowl.
- 5
Peel and Segment Grapefruit
Repeat the same process as the oranges to peel and segment the grapefruit, adding the segments to the salad bowl.
- 6
Juice the Lemon
Cut the lemon in half and squeeze the juice into a small bowl, discarding the seeds.
Making the Dressing
- 7
Combine Dressing Ingredients
In a small bowl, whisk together the olive oil, honey, Dijon mustard, salt, black pepper, and lemon juice until well combined.
Assembling the Salad
- 8
Combine All Ingredients
Pour the dressing over the salad base and toss gently to coat. Add the citrus segments, feta cheese, and sunflower seeds. Toss again lightly to combine.
- 9
Serve Immediately
Serve the salad immediately for the best texture and flavor.
