Pretzel Dough

Method

Pretzel Dough Preparation

  1. 1

    Activate the Yeast

In a small bowl, dissolve the active dry yeast and granulated sugar in warm water. Let it sit for about 5-10 minutes until foamy.

  2. 2

    Prepare the Dough

In a large mixing bowl, combine the all-purpose flour and salt. Add the activated yeast mixture and melted unsalted butter. Mix until a dough forms.

  3. 3

    Knead the Dough

Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth and elastic. Place it in a greased bowl, cover with a damp cloth, and let it rise for about 1 hour or until doubled in size.

  4. 4

    Shape the Pretzels

After the dough has risen, preheat the oven to 450°F (232°C). Divide the dough into small pieces and roll each piece into a long rope. Shape each rope into a pretzel shape and place on a baking sheet lined with parchment paper.

  5. 5

    Boil the Pretzels

In a large pot, bring water to a boil and add baking soda. Boil each pretzel for about 30 seconds, then remove and place back on the baking sheet. Sprinkle with coarse sea salt.

  6. 6

    Bake the Pretzels

Bake the pretzels in the preheated oven for 12-15 minutes or until golden brown. Remove from the oven and allow to cool slightly.

Cheese Sauce Preparation

  1. 7

    Make the Roux

In a saucepan over medium heat, melt the unsalted butter. Stir in the all-purpose flour and cook for about 1-2 minutes until bubbly and light golden.

  2. 8

    Add Milk

Gradually whisk in the milk, ensuring there are no lumps. Continue to cook, stirring frequently, until the sauce thickens (about 3-5 minutes).

  3. 9

    Add Cheese and Seasonings

Remove from heat and stir in the shredded cheddar cheese until melted and smooth. Season with salt, ground black pepper, and garlic powder. Mix well.
