Cooking Pork Belly

    Prepare the Pork Belly

    Preheat your oven to 150°C (300°F). Score the pork belly skin in a crosshatch pattern, being careful not to cut too deep into the meat.

    Marinate the Pork Belly

    In a bowl, mix together the brown sugar, soy sauce, minced garlic, black pepper, and salt. Rub this mixture all over the pork belly, ensuring it gets into the scored areas. Let it marinate for at least 1 hour, or overnight in the refrigerator for best results.

    Roast the Pork Belly

    Place the marinated pork belly on a rack in a roasting pan. Roast in the preheated oven for about 2.5 to 3 hours, or until the meat is tender and the skin is crispy. If necessary, you can increase the temperature to 220°C (425°F) for the last 20 minutes to achieve extra crispiness.

    Rest and Slice

    Once done, remove the pork belly from the oven and let it rest for 15 minutes before slicing it into thick strips.

Assembling the Burger

    While the pork belly is resting, slice the burger buns in half and toast them lightly on a grill or in a toaster.

    Place a slice of cheddar cheese on the bottom half of each toasted bun. You can place the buns under the broiler for a minute to melt the cheese if desired.
