Preparing the Tri-Tip

Season the Meat
In a small bowl, combine salt, black pepper, garlic powder, and onion powder. Rub the mixture all over the tri-tip roast.

Sear the Tri-Tip
In a large skillet, heat olive oil over medium-high heat. Once hot, add the tri-tip roast and sear for about 4-5 minutes on each side until browned.

Cook the Tri-Tip
Transfer the seared tri-tip to a slow cooker. Pour in the beef broth. Cover and cook on low for 6-8 hours or until the meat is tender.

Slice the Tri-Tip
Once the tri-tip is cooked, remove it from the slow cooker. Let it rest for about 10 minutes, then slice it thinly against the grain.

While the meat is resting, preheat your oven to 350°F (175°C). Slice the hoagie rolls lengthwise and place them on a baking sheet.

Layer the sliced tri-tip on the bottom half of each hoagie roll. Top with caramelized onions and provolone cheese.
