    Preheat your oven to 400°F (200°C).

    Prepare the Potatoes

    Wash the Russet potatoes thoroughly and dry them with a paper towel. Prick each potato several times with a fork.

    Rub each potato with olive oil and sprinkle with salt and black pepper.

Baking

    Bake the Potatoes

    Place the prepared potatoes directly on the oven rack and bake for 45-60 minutes, or until tender when pierced with a fork.

    Cool and Cut

    Once baked, remove the potatoes from the oven and allow them to cool for 10 minutes. Cut each potato in half lengthwise and scoop out a portion of the flesh, leaving about 1/4 inch of potato skin.

Assembling the Skins

    Place the potato halves on a baking sheet. Fill each half with shredded cheddar cheese, crumbled bacon, and a sprinkle of sliced green onions.

    Return the loaded potato skins to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
