    Bake the Potatoes

    Preheat your oven to 400°F (200°C). Wash the Russet potatoes thoroughly and pierce them a few times with a fork. Rub the potatoes with olive oil and sprinkle salt evenly over them. Place the potatoes on a baking sheet and bake for about 45-60 minutes, or until they are tender and a fork easily pierces through.

    Cool and Cut the Potatoes

    Once the potatoes are cooked, remove them from the oven and let them cool for about 10 minutes. Cut each potato in half lengthwise, and scoop out a portion of the flesh, leaving about a 1/4-inch thick shell.

    Season and Add Cheese

    Brush the inside of each potato skin with olive oil and season with salt and black pepper. Fill each skin with shredded cheddar cheese, and top with crumbled bacon.

    Bake Again

    Place the filled potato skins back in the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

    Garnish and Serve

    Remove the potato skins from the oven and allow them to cool slightly. Top with chopped green onions and serve warm with a side of sour cream for dipping.
