Prepare the Batter
In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, black pepper, and cayenne pepper. Whisk until well combined. Gradually add the cold beer or sparkling water and stir until the batter is smooth; let it rest for 15 minutes.

Prepare the Fish
Pat the fish fillets dry with paper towels and cut them into strips or pieces that will fit in the tortillas.

Heat the Oil
In a deep skillet or frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small amount of batter into it; if it sizzles and bubbles, it’s ready.

Fry the Fish
Dip each piece of fish into the batter, allowing excess to drip off. Carefully place the battered fish into the hot oil in batches, being careful not to overcrowd the pan. Fry for about 3-4 minutes or until golden brown and crispy. Use a slotted spoon to remove the fish and drain on paper towels.

In a separate skillet, warm the corn tortillas over medium heat for about 30 seconds on each side until pliable.

To assemble, place a few pieces of fried fish on each tortilla. Top with shredded cabbage, chopped cilantro, and slices of avocado. Drizzle with sour cream (if using) and add hot sauce to taste.
