1. Rinse and Cook Quinoa
Rinse 1 cup of quinoa under cold running water in a fine mesh strainer. Add it to a medium saucepan with 2 cups of vegetable broth. Bring to a boil, then reduce to a simmer, cover, and cook for about 15 minutes or until the quinoa is fluffy and the broth is absorbed. Remove from heat and let it sit covered for 5 minutes.
2. Sauté Vegetables
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and minced garlic, sautéing for 3-4 minutes until translucent. Then add the diced bell pepper and zucchini, cooking for another 5 minutes until tender.
3. Add Spinach and Seasoning
Stir in the fresh spinach and continue to cook for 2-3 minutes until wilted. Add cumin, paprika, salt, and black pepper, mixing well to combine.
