For the Ravioli
Method
Preparation
- 1
Make the Ravioli Dough
In a large bowl, combine flour and salt. Make a well in the center and add the egg. Gradually mix the flour into the egg until a dough forms. Knead on a floured surface until smooth. Wrap in plastic and let rest for 30 minutes.
- 2
Prepare the Filling
In a mixing bowl, combine ricotta cheese and a pinch of salt. Mix until smooth and set aside.
- 3
Roll Out the Dough
After resting, divide the dough into four parts. Roll each part out thinly on a floured surface.
- 4
Fill the Ravioli
Place small spoonfuls of the ricotta mixture on the rolled-out dough, leaving space in between. Fold the dough over to cover the filling, and press around each mound to seal. Cut into squares or circles.
- 5
Cook the Ravioli
Bring a large pot of salted water to a boil. Add the ravioli and cook for about 3-4 minutes or until they float to the surface. Remove with a slotted spoon.
- 6
Make the Vodka Sauce
In a large skillet, heat olive oil over medium heat. Add minced garlic and red pepper flakes, sautéing until fragrant. Carefully add vodka and let it simmer for 3-4 minutes. Stir in heavy cream and bring to a gentle simmer.
- 7
Combine and Serve
Add the cooked ravioli to the sauce, gently tossing to coat. Stir in parmesan cheese, and season with salt and pepper to taste. Garnish with fresh basil before serving.
