Pasta Primavera Directions

  1. 1

    Cook the Pasta

In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.

  2. 2

    Sauté the Vegetables

In a large skillet, heat the olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.

  3. 3

    Add Veggies

Add the bell pepper, zucchini, carrot, and cherry tomatoes to the skillet. Sauté for about 5-7 minutes, or until the vegetables are tender.

  4. 4

    Incorporate Spinach

Add the fresh spinach to the skillet and cook for an additional 2-3 minutes until wilted.

  5. 5

    Combine Pasta and Veggies

Add the cooked pasta to the skillet with the sautéed vegetables. Toss to combine and add salt, black pepper, and half of the grated Parmesan cheese.

  6. 6

    Serve

Serve the pasta primavera warm, garnished with the remaining Parmesan cheese and fresh basil.
