Preparation Steps

  1. 1

    Cooking the Potatoes

Boil the potatoes in a large pot of salted water until tender, about 20 minutes. Drain and let cool slightly.

  2. 2

    Making the Dough

Peel the potatoes and pass them through a potato ricer or mash them until smooth. In a large bowl, combine the potato puree, flour, egg, and salt. Mix until a dough forms.

  3. 3

    Forming the Gnocchi

Turn the dough onto a floured surface and knead gently until smooth. Divide the dough into four pieces. Roll each piece into a long rope about 1/2 inch thick. Cut the rope into 1-inch pieces.

  4. 4

    Shaping the Gnocchi

To shape the gnocchi, you can use the tines of a fork to create ridges on one side. Alternatively, you can use a gnocchi board.

  5. 5

    Cooking the Gnocchi

Bring a large pot of salted water to a boil. Add the gnocchi in batches and cook until they float to the surface, about 2-3 minutes. Remove with a slotted spoon and drain.
