Rinse the Rice
Rinse the long-grain white rice under cold water until the water runs clear, removing excess starch.

Soak the Rice
Place the rinsed rice in a large bowl and add 4 cups of water. Cover and let it soak for at least 4 hours, or preferably overnight.
Blending

Blend Ingredients
After soaking, drain the rice and transfer it to a blender. Add 4 cups of fresh water, 2 cinnamon sticks, 1 tsp of vanilla extract, and a pinch of salt. Blend until smooth and creamy.

Strain the Mixture
Pour the blended mixture through a fine-mesh strainer or cheesecloth into a large pitcher to separate the liquid from the rice pulp. You may need to press down to extract all the liquid.

Chill the Horchata
Refrigerate the horchata for at least 30 minutes to chill before serving.

Pour over ice in glasses and sprinkle with ground cinnamon on top, if desired. Enjoy your refreshing horchata!
