Cook the Chorizo

In a skillet over medium heat, add the chorizo sausage. Use a wooden spoon to break it apart as it cooks. Cook until browned and fully cooked, about 5-7 minutes. Drain any excess fat and set aside.

Prepare the Cheese Mixture

In a large mixing bowl, combine the Oaxaca cheese, Monterey Jack cheese, and cream cheese. Mix well until all the cheeses are evenly distributed.

Combine Chorizo and Cheese

In the same skillet used for the chorizo, add the cheese mixture and the cooked chorizo. Stir well to combine and evenly distribute the chorizo throughout the cheese.

Melt the Cheese

Reduce heat to low and cover the skillet with a lid. Let it cook for about 5-10 minutes or until the cheese is completely melted, stirring occasionally to prevent sticking.

Garnish and Serve

Once the cheese is melted and gooey, remove from heat. Top with chopped fresh cilantro and diced jalapeño, if desired. Serve immediately with tortilla chips for dipping.
