Preparation
Make the Marinade
In a medium bowl, whisk together the olive oil, lemon juice, minced garlic, fresh thyme leaves, salt, and black pepper until well combined.
Marinate the Chicken
Place the boneless chicken breasts in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring that each piece is well coated. Seal the bag or cover the dish, and refrigerate for at least 30 minutes (or up to overnight for more flavor).
Grilling
Preheat the Grill
Preheat your grill to medium-high heat (about 375°F to 400°F or 190°C to 200°C).
Grill the Chicken
Remove the chicken from the marinade and let the excess drip off. Place the chicken breasts on the grill. Grill for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C) and the chicken is no longer pink in the center.
Rest and Serve
Once cooked, remove the chicken from the grill and let it rest for 5 minutes before slicing. Serve warm with your choice of sides.
