Caramel Preparation

    Make the Caramel

    In a medium saucepan, combine the granulated sugar and water. Cook over medium heat, stirring gently until the sugar dissolves.

    Caramelize the Sugar

    Once the sugar dissolves, stop stirring and allow the mixture to boil until it turns a deep amber color. This should take about 8-10 minutes. Be careful not to burn it.

    Coat the Mold

    Immediately pour the caramel into a round flan mold or individual ramekins, swirling to coat the bottom evenly. Set aside to cool and harden.

Custard Preparation

    Heat the Dairy

    In a large saucepan, combine the whole milk and heavy cream. Heat over medium heat until just steaming, but do not boil.

    Mix the Sugar and Eggs

    In a separate bowl, whisk together the granulated sugar, eggs, egg yolks, and vanilla extract until well combined and slightly frothy.

    Combine Dairy and Egg Mixture

    Slowly pour the hot milk mixture into the egg mixture while whisking continuously to temper the eggs. This prevents them from scrambling.

    Strain the Mixture

    Strain the combined mixture through a fine-mesh sieve into another bowl to remove any curds or lumps.

    Pour into Mold

    Carefully pour the custard mixture over the hardened caramel in the mold or ramekins.

Baking

    Prepare the Water Bath

    Preheat your oven to 350°F (175°C). Place the flan mold or ramekins in a larger baking dish. Add hot water to the baking dish so it comes halfway up the sides of the flan mold.

    Bake the Flan

    Bake in the preheated oven for 50-60 minutes, or until the custard is set but still slightly jiggly in the center.

    Cool and Refrigerate

    Remove the flan from the water bath and let it cool to room temperature. Once cooled, refrigerate for at least 4 hours or overnight.

Whipped Cream Preparation

    Make the Whipped Cream

    In a mixing bowl, beat the heavy cream, powdered sugar, and vanilla extract until soft peaks form.

    Serve with Flan

    Once the flan is chilled and set, carefully invert it onto a serving plate. Serve slices of flan topped with whipped cream.
