Prepare the Tortillas
Cut each corn tortilla into 6 equal triangles using a sharp knife or pizza cutter.

Heat the Oil
In a large skillet or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Chips
Carefully add the tortilla triangles to the hot oil in batches, being careful not to overcrowd the pan. Fry for about 2-3 minutes until golden brown and crispy.

Drain and Season
Using a slotted spoon, remove the chips from the oil and place them on a plate lined with paper towels to drain excess oil. Immediately sprinkle with salt to taste.

Mix the Salsa
In a medium bowl, combine the diced tomatoes, onion, chopped cilantro, lime juice, chopped jalapeño, and salt. Stir well to combine all the ingredients.

Let it Chill
Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld together.
